Garlic Parmesan Chicken & Potato Skillet – Midwest Comfort Food at Its Best

My Garlic Parmesan Chicken & Potato Skillet is exactly that—a one-pan wonder that’s bursting with flavor, easy to make, and perfect for busy weeknights. No wonder it’s one of my most viral recipes!

Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces

  • 4 medium Yukon gold potatoes, diced

  • 4 tbsp olive oil (divided)

  • 5 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • ½ cup grated parmesan cheese

  • Fresh parsley for garnish


Instructions

  1. Prepare the potatoesHeat 2 tbsp olive oil in a large skillet over medium heat. Add diced potatoes, season with salt, pepper, and paprika. Cook until golden brown and tender, about 12–15 minutes. Remove and set aside.

  2. Cook the chickenIn the same skillet, add the remaining 2 tbsp olive oil. Add chicken, garlic, Italian seasoning, and a pinch of salt and pepper. Cook until chicken is golden brown and cooked through, about 7–9 minutes.

  3. Combine & finishAdd the potatoes back into the skillet with the chicken. Sprinkle parmesan cheese over the top and toss gently until everything is coated and cheesy.

  4. Garnish & serveTop with fresh parsley and an extra sprinkle of parmesan. Serve hot right out of the skillet for a rustic Midwest-style dinner.



Tips & Variations

  • Swap chicken breasts for chicken thighs for extra juiciness.

  • Add broccoli or green beans to sneak in more veggies.
